Superfoods: Are Tomatoes Good For You?

One bite of a juicy red organic tomato will rarely leave you disappointed. Its richness and goodness bears no comparison to an artificially ripened, non-organic tomato.

Tomatoes are reliable sources of vitamins and minerals that are known to protect the body from all types of cancers such as cancer of the breast, cervix, gastrointestinal and prostate. They contain Lycopene which is found in the skin of the tomato. In this respect, canned and processed products such as tomato purees or ketchup could also be deemed as healthy due to the high levels of Lycopene present.

Its healthy-looking texture is certainly not a substitute for its taste. Many researchers do indicate that the freshness of a tasty tomato is certified by its heavy concentration of seeds and juicy flesh. Choose from a wide range of tin cherry tomatoes or big beefsteak ones as not only are they wholesome but they go great with sandwiches, pizzas or any main courses.

For a full, hearty and rich serving of tomato flavor, try this home-made Pizza :

Ingredients

1½ cup of all-purpose flour
1½ cup of wheat flour
1 tsp baking powder

7 tbsp milk
2 tbsp chopped basil
4 tomatoes chopped

4 oz of buffalo-mozzarella cheese
½ teaspoon of salt
1 green capsicum
2 cups mushrooms
2 cups onion rings
¼ cup non-hydrogenated margarine


Pizza Sauce

6 medium tomatoes blanched and liquidized
1 cup chopped onion
8 cloves minced garlic
1 bay leaf
3 tsps dried oregano
1 tbsp dried basil
1 tsp dried thyme
2 tbsp tomato paste
2 tbsp tomato sauce
1 tsp black pepper
1 green chilli

1 tsp sugar
Pinch of salt


To Make the sauce
  1. Heat oil in a pot and add garlic and onion. Stir fry until onions turn soft.
  2. Stir in the tomatoes and continue to cook for several minutes. Add the tomato paste and tomato sauce followed by all spices. Cook for approximately 15 to 20 minutes, stirring occasionally. Add salt and sugar to taste.
To Make the Pizza
  1. Preheat oven to 200 degrees. Combine the all-purpose flour, wheat flour, baking powder and salt in a mixing bowl and stir. Lightly rub in some margarine then stir in some milk to make a soft non-sticky dough.
  2. Place pizza dough on a sheet of baking parchment on a piece of baking sheet and press it out evenly to form a 24 cm circle. Ensure that the crust is thicker than the centre.
  3. Spread the pizza sauce evenly over the dough and layer it with chopped tomatoes, sliced green capsicum, mushrooms and onions.
  4. Sprinkle some chopped basil with a dash of salt and pepper. Add the shredded mozzarella cheese.
Bake for 25 to 30 minutes until dough is crisp and golden brown. Garnish the pizza with oregano and serve immediately.
