The Disgruntled Chef

From its conception, Dempsey Road restaurant The Disgruntled Chef was going to be unlike most venues in Singapore. Seasoned chef Daniel Sia and his partners, husband and wife design team Keith Codling and Dawn Koh, intended for it to be something beyond the usual celebrity chef culture of degustation menus and formal dining. It was going to sidestep the traditional relationship between good food and formality. The Disgruntled Chef was meant to be as much about the bar as it was the restaurant, and about the customer, not the chef.

Together, Daniel, Dawn and Keith are The Disgruntled Chef. Joking that exceptional food in Singapore increasingly requires you to get dressed up, do something clever with your hair and remember to watch your posture, the founders wanted to go in the opposite direction, with a place that had a more informal and less trendy atmosphere, where guests could be more relaxed. It was time for Daniel to start something of his own.

Although given a quirky name, The Disgruntled Chef was always meant to be about serious food, innovative cocktails, great wine and good service. The grand concept was that informality shouldn’t mean cutting corners on anything.

The restaurant’s latest menu is inspired by a trip recently taken by The Disgruntled Chef team and plays on the idea of indulging in the many bounties of summer. The new items evoke the smell of the Spanish seaside and the memory of a sun-soaked courtyard meal overlooking ripening vines. Selections take a decidedly Spanish spin with offerings such as a classic Tortilla de Patata or juicy Serrano Ham with Confit Potatoes, with refreshing slices of Pressed Watermelon with Sangria or crisp and chewy Churros with Hot Chocolate for dessert.

The Disgruntled Chef opened in Dempsey in September 2010. By January 2011 Travel + Leisure had included The Disgruntled Chef in their very short list of Best of Asia 2010 and it had been nominated Best New Restaurant by a Singapore Chef in Time Out Singapore, alongside Sky on 57 by Justin Quek, Restaurant Andre by Andre Chiang and Ku De Ta by Dan Segall.
