The Moluccas Room has opened at Marina Bay Sands, offering diners a new fine-dining concept featuring the unique marriage of authentic Indonesian cuisine and French cooking techniques. Moluccas, the former name of present day Maluku, is an Indonesian province consisting of islands that produce spices such as nutmeg, clove and mace, among others. At The Moluccas Room, this rich spice heritage is celebrated through the restaurant’s contemporary Indonesian menu. “With The Moluccas Room, we aim to be the first to redefine Indonesian cuisine. We want to position Indonesian cuisine with the likes of French cuisine, by focusing on the use of premium ingredients and incorporating western cooking techniques that will bring out the best flavours in our food,” shares Alicia Tivey, Executive Chef of The Moluccas Room. With over 20 years of experience in the kitchen, Indonesian-born Chef Alicia Tivey is trained in French cooking and has worked in leading restaurants in Australia including Tetsuya’s. On The Moluccas Room menu, guests will find classic Indonesian dishes with contemporary touches. Whether it is the introduction of ingredients not commonly found in Indonesian cuisine or the adoption of new cooking techniques, it is Chef Alicia’s aim to reintroduce Indonesian cuisine and show guests how Indonesian food can evolve. |

Some of The Moluccas Room's signature dishes including seven varieties of sate, all made with premium ingredients; Angus Steak Rendang, a perfectly grilled 180-gram Angus tenderloin steak in a tasty Javanese style rendang sauce; and Sri Kaya Crème Brulee, a creamy coconut custard flavoured with pandan, topped with a caramelised crust and served with homemade ice cream with Indonesian flavours such as gula melaka.
